"MATA" sambal

Posted on Sabtu, 08 Januari 2011 Posted by traveler adventure

today is going to be the most unproductive day in my life, you know, I went to sleep at 5am, and woke up at 11am. and then doing nothing. Thats the point, "doing nothing", until finally I decided to make some special food from Bali.
I text my friend from Bali, to know how to make it. Okay, so, her name is Mang Ayu . She's like "the original product" from Bali, so she good on it. And then my phone was ringing, and she text me the ingredients.

Here is the ingredients :
 1. red chili (until this writing posted, chili in Indonesia
has the highest price ever, IDR 100.000 / kg)
 2. red onion
 3. shrimp paste (its called "terasi" here)
 4. lime
 5. coconut oil
 6. and salt

How to make it?
cut chili and onion into thin strips, burn the shrimp paste, and than we are ready to the most important things. Most of "sambal" making is by mashed all of the ingredients with a tools called "cobek". But different with another "sambal", this "sambal" is mashed by your hand, with your finger. While it mashed by hand, pour coconut oil onto it. Just a little, than lime, than put shrimp paste that has been burned. And here we go, you have made "Mata" sambal...

bon appetit...!
